Ingredients 200 ml (7 fl oz) Milk
75g (3 oz) Cheshire Cheese
2 Eggs
40g (1½ oz) Plain Flour
40g (1½ oz) Butter

Method

Pre-heat
oven to 190°C: 375°F: Gas 5

In a
saucepan heat the butter, flour and milk together, bring to a boil,
whisking continuously until thickened and smooth.

Simmer for
a minute or two.

Remove from
the heat and add the grated cheese.
Stir until melted then beat in the egg yolks, allow to cool slightly.

Whisk the
egg whites until stiff.

Carefully
fold into the cheese mixture.

Pour into 6
buttered ramekins and bake for 30 minutes.

Serve
immediately
