Ingredients 450g (1lb)
Cheshire Cooking Apples
110g (4oz) Sugar (or to taste)
2 large Eggs, separated
Juice of 1 Lemon

Method

Preheat
oven to 180°C: 350°F: Gas 4.

Peel, core
and thinly slice the apples and cook 2 tbsp of water, stirring
occasionally until they form a puree.
Separate the eggs.

Add about ¾
of the sugar, the lemon juice and the egg yolks, mixing well.

Place in an
ovenproof dish and bake for 20 minutes.

Whisk the
egg whites until stiff and fold in the remaining sugar.

Pile the
meringue evenly on top of the apple mixture, return the dish to the
oven, and bake for another 10 minutes.

Serve hot
or cold.
